Recipe: Leftover Fried Rice

Does anyone else consistently overestimate how much rice to make at one time and end up with excessive leftovers? One of my favorite things to make with extra rice is fried rice. As with most of my recipes, it is very easy and there isn’t any measuring involved. 

Ingredients: think of these as guidelines and adjust depending on your preferences and based on what other leftovers are hanging out in your fridge.

Leftover rice - however much you have. 

2 - 3 Vegetables - whichever ones you have in the fridge. If you like to plan ahead, I recommend bell pepper, zucchini, and peas! But honestly, any veggies will do. 

Tamari or soy sauce 

A dash of hot chili sesame oil OR plain sesame oil 

Salt, pepper, garlic (fresh and/or powdered) 

Protein - chicken or tofu are my go-tos for this one. 

1-2 eggs 

*nutritional yeast for topping 

Looks like mush, tastes like heaven.

Directions:

Start by sautéing your garlic and tofu (or chicken). Add in veggies when the tofu/chicken is mostly cooked or starting to look a little crispy. Once the veggies are mostly cooked, add rice. Flavor with tamari/soy sauce and sesame oil. Add slowly as they are both strong flavors. Once the rice is warm, scramble your egg(s) directly into the whole concoction. Once the eggs are cooked, salt and pepper to taste. Serve it up and sprinkle some nutritional yeast on top for extra savory goodness.
