Recipe: Pineapple Coconut Chia Pudding

Chia Seed Fun Facts:

They are a complete protein! Which means they contain all 9 essential amino acids.

They are a source of omega-3 fatty acids, fiber, protein, calcium, phosphorus, and zinc.

They can absorb up to 10 times their weight in liquid!

2 tablespoons of chia soaked in liquid can replace eggs in recipes.

There are mixed reviews on whether they are the same chia seeds used for chia pets. It would appear that they are the same seed, but perhaps there is a difference in food grade and terra cotta hair-growing grade.

Well, now that I have your attention…this month’s recipe is chia seed pudding! This versatile dish is a great side dish, dessert, breakfast…it fits in anywhere! Feel free to top it with fresh fruit, honey, or mix into overnight oats or smoothies.

Ingredients:

1 can full fat coconut milk

5 tablespoons chia seeds

1/4 cup pineapple juice (no sugar added, ideally)

Sprinkle of cinnamon

*optional toppings: fresh fruit, honey

Directions:

Open the can of coconut milk and pour into a bowl (I put it straight into a glass tupperware for easy storage). Use a handmixer to break up the chunky bits. Add the pineapple juice, cinnamon and chia seeds. Mix with a fork.

Leave in fridge to cool for a few hours until it sets. Then dig in!!
